Draught Beer Pipe Cleaning and Serving Guidelines:
Importance of Cleaning:
- Regular draught beer pipe cleaning/sterilization is crucial due to natural sugars in drinks causing fermentation and sedimentation.
- Microbacteria development may lead to beer with bad Odors, off-taste, cloudiness, and excessive foam.
- Particularly vital for low turnover systems where drinks linger, facilitating sediment and bacteria formation.
Effective Cleaning Method:
- Utilize a chemical system for optimal cleaning.
- Replace beer keg with a special container filled with a brewery-supplied disinfectant/detergent solution diluted with water.
- Follow the beer dispensing process, allowing the liquid to flow, stay, and then discharge.
- Rinse the circuit with fresh water, completing the cleaning process in 45 minutes to an hour.
Additional Maintenance Tips:
- Periodically clean spouts (taps) and heads for effective sterilization.
- Regularly check and service draught dispense system equipment.
Rinsing Practices:
- Ideally, rinse with pure water when changing a keg.
- Daily clean dispense tap spout with hot water to prevent foam residues, which can attract germs and flies.
Result of Regular Cleaning:
- Consistent cleaning leads to a perfect beer with a clear, bright colour, enticing aroma, and impeccable taste.
Serving a Perfect Beer:
Visual Quality:
- A good glass of beer should appear transparent with a 2 to 4cm thick foam collar (varies by country).
- Thick foam indicates beer quality and freshness, appealing to both sight and taste.
Glass Preparation:
- Use a high-quality, impeccably cleaned glass.
- Avoid scented detergents.
- Wet the glass before pouring to lower its temperature, preventing thermal variation.
- A wet glass prevents foam from sticking, maintaining thickness.
Pouring Techniques:
- Tilt the glass while pouring or start tilting and then fill upright for a larger head, allowing gas to escape.
- Never let the tap spout touch the beer being dispensed; move the glass downward away from the spout.
These guidelines ensure a visually appealing and flavourful beer experience, emphasizing the importance of cleanliness and proper pouring techniques.
